Pumpkin Porridge with Minced Chicken
This brightly-coloured sweet treat is a keeper

This bright orange and sweet dish will find easy takers among kids. If you like, stir in some chopped Chinese cabbage for sweetness and add more vegetables. It also makes a good light meal for junior when he’s feeling under the weather.


Serves 2 tots

Ingredients
50g minced chicken or pork
1 tsp soy sauce
¼ tsp corn flour
2 cups chicken stock
½ cup white rice
½ cup diced pumpkin
A pinch of salt 

Method
1. Mix soy sauce and corn flour into the minced chicken or pork. Set aside briefly.
2. Bring chicken stock to a boil, then add the rice and pumpkin. Pour a ladleful of hot water into the minced meat, stir to loosen it and add to the porridge. Cook over medium flame, about 25 to 30 minutes, until the rice is broken and soft. Stir occasionally to prevent burning.
3. Add salt, let it cool slightly and serve.
