Recipes
Macaroni with Salmon
Turn this up a notch for adults

By Sim Ee Waun
Fresh is best, so use fresh salmon for this dish rather than canned salmon, even though it’s an acceptable substitute. To bring this dish to a more sophisticated level for adults, stir in some truffle-infused olive oil just before serving. It makes a world of difference for the grown-ups!

Serves 2 tots

Ingredients
1 cup macaroni
½ cup peas and corn kernels
100g salmon fillet
2 tsps soy sauce
A pinch of sugar
50g butter
2 tbsps olive oil
2 shallots, chopped
1 clove garlic, chopped
Salt to taste
2-3 tbsps milk (if needed)

Method
1. Cook macaroni in 3 cups of boiling water. Just before the pasta is done, add peas and corn kernels to the boiling pasta for 2 to 3 minutes. Drain and set aside.
2. Meanwhile, rub soy sauce and sugar over salmon. Remove all bones, cut into cubes, and set aside.
3. In a heated wok, add olive oil and butter and stir until butter melts. Sauté garlic and shallots briefly before adding pasta, peas, corn, salmon and salt to taste. Add 2 to 3 tablespoons of milk if the dish is too dry.
4. Toss to mix the ingredients well and heat through, about 3 to 4 minutes.
5. Serve warm.

FAST FACT
Fish is often described as brain food - since the brain comprises more than 60 per cent fat, the fatty acids found in certain fish help to move nutrients across the fatty membranes of our brain cells, as well as eliminate waste. Studies show that brain-related problems such as Alzheimer's, dementia and even Parkinson’s, can be improved by consuming omega 3 fatty acids, which salmon has plenty of.

DID YOU KNOW?
Real mozzarella is made from the milk of the water buffalo. Because the milk from this animal is so much more expensive than cow’s milk, mozzarella can be rather pricey.
