Macaroni Cheese
A sure-fire favourite among the little ones

Serves 4 to 6 


Preparation time: 25 minutes
Cooking time: 2-3 hours

INGREDIENTS
200g macaroni pasta
Cooking oil spray
375ml (13 oz) tinned evaporated milk
375ml full cream milk
3 eggs, lightly beaten
½ tsp freshly grated nutmeg
3 spring onions, chopped
125g tinned corn kernels, drained
60g thinly sliced ham, chopped
185g grated cheddar cheese
100g grated parmesan cheese
Snipped chives, to garnish
 

METHOD
1. Put the pasta in a large heatproof bowl. Pour over boiling water and set aside, stirring occasionally, for 10 minutes. Drain.
2. Spray the slow cooker bowl with cooking oil spray or grease well with butter or oil.
3. Combine the evaporated milk, milk, egg and nutmeg in the slow cooker. Season with salt and freshly ground black pepper. Stir in the drained pasta, spring onion, corn, ham, 125g (1 cup) of the cheddar cheese and all of the parmesan cheese. Sprinkle over the remaining cheddar.
4. Cook on low for 2-3 hours. Take care not to overcook it — the sauce will still be a little wet in the centre. If cooked for too long, it will curdle, so start checking after 2 hours — the pasta should be al dente and the sauce thick. Spoon out onto serving plates, sprinkle with the chives and serve with a salad on the side.


Note: Cook on low heat only. Leave out the ham for a vegetarian meal.

This spice, also used in India’s Ayurvedic medicine to cure urinary incontinence, can help ease arthritis, muscle pain, rheumatism and poor circulation.
 

Did You Know?
Frozen meat doesn’t heat quickly enough to offset bacteria growth in a slow cooker, so always thaw meat first before placing in the pot. To boost flavour and appearance, do brown the meat and sauté some of the vegetables before adding them to your crock pot.
