Melon Sorbet
A yummy guilt-free sweet treat

[Makes about 1 litre] 

The wide variety of melons available today offers many potential sorbet flavours. Pale green honeydew, rosy watermelon, or the golden cantaloupe is ideal. For a handsome presentation, surround the sorbet with melon balls in a contrasting colour. Consider pairing a pale green melon with an orange-hued ice or rosy pink melon with green-toned ice. Garnish with a pretty edible blossom. 

INGREDIENTS

About 1.4kg melon, peeled and seeded
¼ cup sugar
3 tbsps freshly-squeezed lime juice 

METHOD
1. Cut the melon into 1-inch cubes and purée in a food processor (about 3 cups).
2. Combine the purée with the sugar and juice and stir until dissolved. Cover and refrigerate until thoroughly chilled, about 3 hours.
3. Pour into a 9-inch non-reactive square pan. Cover with aluminium foil or plastic wrap and freeze just until solid, 2 to 3 hours.
4. Scrape out into a food processor or electric mixer and process until light and fluffy. Serve at once or transfer to a container, cover, and freeze until firm, about 2 hours.



FAST FACT
High in water content, melons are not just fat- and cholesterol-free, they are relatively low in calories. This fruit, which belongs in the same gourd family as cucumber, is a good source of potassium, beta-carotene and vitamin C. Melons may have anti-clotting properties and are also thought to lower cancer and heart disease risk. Watermelon contains high levels of lycopene, an antioxidant that helps the body fight cancer and prevents disease. 


DID YOU KNOW?
Air is one of the major ingredients in ice-cream since without air, this sweet treat would be as hard as a rock. Unusual ice-cream flavours that have been created include garlic, jalapeño and pumpkin. Perhaps the weirdest was dill pickle ice-cream, which was marketed to expectant mothers. Not surprisingly, sales were disappointing.
