Spanish Omelette
Protein-packed dish to improve junior's memory power
[Serves five]
INGREDIENTS
1½ dessertspoons olive oil
2 medium potatoes, peeled and sliced thinly
2 large onions, minced
6 dessertspoons red or green capsicum, diced
2 large tomatoes, chopped
½ tsp salt
Dash of pepper
5 eggs, lightly beaten (use all the egg whites but only 2 yolks)
Parsley to garnish
Romaine lettuce to garnish
METHOD
1. Heat oil in a non-stick pan. Stir-fry potatoes until soft.
2. Add the onions and capsicum, and cook for a minute.
2. Add tomatoes, salt and pepper. Stir-fry for another 2 to 3 minutes.
3. Stir in eggs and mix evenly with vegetables.
4. Reduce heat and cook until omelette is set. Remove from pan and finish off by browning the top of the omelette under a grill.
5. Cut omelette into wedges, garnish with parsley and serve on a bed of lettuce.

Other than being a wonderful protein source, egg yolks are packed with choline, a nutrient in the B vitamin family which boosts memory development.
Top Tip!
Use less oil when cooking for the family. Instead of deep-frying, choose healthier methods, such as grilling, steaming or boiling. When buying food products, pick items with the Healthier Choice Symbol. They are generally lower in fat, sodium and sugar. |
