Braised Fish In Sweet And Sour Sauce
A yummy treat that's great with warm rice
[Serves four]
INGREDIENTS
150g fresh fish fillets (snapper/cod/ikan kurau)
A dash of salt
1 tbsp cornflour
2 tsps oil
Sweet and Sour Sauce
1 tbsp cornflour
2 tbsps water
1 cup chicken stock
2 tbsps tomato ketchup
1½ tsps sugar
2 cups frozen mixed vegetables, thawed and blanched
METHOD
1. Cut the fish fillets into bite-sized pieces.
2. Mix the salt and cornflour in a bowl.
3. Heat half the oil in a non-stick pan. Toss the fish pieces in the cornflour and salt mixture and shake off the excess flour before frying evenly until light brown. Set aside.
4. To prepare the sauce:
a. Mix the cornflour with water.
b. Mix the chicken stock, ketchup and sugar in a pan and bring to the boil.
c. Add the cornflour and water mixture gradually, whisking all the time.
5. Add mixed vegetables to the sauce and cook for a minute. Then add the fish.
6. Serve hot with rice.

Top Tip!
Sweeteners, like sugar and honey, should not be added to food for babies below 1. You should also ban salt in your infant’s diet till he is at least 10 months since it can cause kidney damage. After his first birthday, continue to go easy on the salt. |
