Mini Cheesecakes
Easy peasy cheescake for a quick snack
[Makes two]
INGREDIENTS
4 digestive biscuits
2 tbsps plain yoghurt
2 tbsps cottage cheese
A few raisins or other dried fruit (dried apricot, mango, guava or apple)
METHOD
1. Mix the yoghurt, cottage cheese and raisins (or other dried fruit) together and spread thickly over two of the biscuits.
2. Put the other two biscuits on top of the filling to make two sandwiches.
Note: Wrap in cling film if you’re packing them in a lunchbox as a snack on-the-go. Eat the cheesecakes on the day they are made, or the biscuits will turn soggy.

Yoghurt is loaded with protein as well as B and D vitamins ? vital nutrients for the growth of your tot’s brain tissue and neuro-transmitters. Since it’s fermented, it’s also pre-digested and easier to process than milk.
Top Tip!
Reduced-fat milk and other dairy products are not suitable for children below 2. When your tot is over 2, you can switch to the reduced-fat versions. |
