Chicken Mee Sua
Confinement fare that's believed to help heal the uterus
[Serves one ]
INGREDIENTS
- 100g chicken breast, steamed and shredded
- 1 tbsp sesame oil
- 20g ginger, shredded
- 300ml chicken stock
- 20g fresh whole shiitake mushrooms
- 200g mee sua
- 30g xiao bai cai
- ½ tsp salt
- 2g white pepper powder
- 2g coriander leaves
- 5g spring onion, chopped
METHOD
- Heat sesame oil in a wok and stir-fry ginger until aromatic.
- Add chicken stock and stir carefully until it comes to the boil.
- Add shiitake mushrooms, mee sua and xiao bai cai, and stir. Add salt and pepper to taste.
- Garnish with shredded chicken, coriander leaves and spring onion.
If you prefer pork to chicken, use 50g sliced pork and 50g of liver and kidney.
METHOD
- Heat sesame oil in a wok and stir-fry ginger until aromatic.
- Add chicken stock and stir carefully until it comes to the boil.
- Add sliced pork to the soup.
- Add shiitake mushrooms, mee sua and xiao bai cai, and stir.
- Add the liver and kidney, as well as salt and pepper to taste.
- Garnish with coriander leaves and spring onion.
