Chicken Herbal Soup
Nourishing confinement fare believed to replenish energy
[Serves one]
INGREDIENTS
- 50g chicken leg, deboned
- 5 red dates
- 15g dang sen (codonopsis)
- 8g kei chee (wolfberries)
- 5g dang gui (Angelica)
- 500ml chicken stock
- Salt and pepper to taste
METHOD
- Chop the chicken into cubes and blanch in hot water, before removing.
- Put chicken, red dates, dang sen, kei chee, dang gui and chicken stock in a double-boiler.
- Bring to the boil over a slow fire, and simmer for 3 hours.
- Add salt and pepper to taste.
