Chicken Herbal Soup
Nourishing confinement fare believed to replenish energy

[Serves one]

chicken herbal soupINGREDIENTS
  • 50g chicken leg, deboned
  • 5 red dates
  • 15g dang sen (codonopsis)
  • 8g kei chee (wolfberries)
  • 5g dang gui (Angelica)
  • 500ml chicken stock
  • Salt and pepper to taste
METHOD
  1. Chop the chicken into cubes and blanch in hot water, before removing.
  2. Put chicken, red dates, dang sen, kei chee, dang gui and chicken stock in a double-boiler.
  3. Bring to the boil over a slow fire, and simmer for 3 hours.
  4. Add salt and pepper to taste.
